A relish is a variation of chopped and pickled fruits and vegetables used as a sauce or seasoning to enhance or balance the taste of the dish. You can make your own mix and right blend of flavor for the aroma that will impart your sense of taste to new heights.

Here’s how you can make your very own spicy green tomato relish.
- Things you need. 1 ¾ to 2 dozens green tomato, 2 medium sized onions, 6 large jalapeno peppers, 1 ½ cup white vinegar, 1 ½ cup grounded sugar, at least 5-6 (500 g) clean canning jars for storage, oven mittens.
- Preparation. Be sure to wash the vegetables before chopping. Drain vegetables and prepare chopping board. You can always use a food processor for easy chopping but you can always do it manually if you want. Pre-heat the casserole while chopping the vegetables. Make sure to sterilize jars as it will be used to store the spicy green tomato relish. You may also want to use oven mittens or clean kitchen cloth to prevent skin burns.
- Cooking. Cut green tomatoes in half and remove seeds. Remember not include the top and bottom part. Then slice tomatoes into half inch strips. Next is to peel the onions and chop into a roughly ground evenness and set it aside. Remove the seeds from the jalapenos. Setting aside the vegetables, boil the vinegar and sugar in a pan with continuous mixing up to dissolution to prevent the sugar from getting burned. Add the jalapeno and onions and let it simmer for 4-5 minutes. Next is to include the tomato strips and let it simmer for 5 more minutes.
- Storing. After boiling, place enough amount of the relish into the canning jars with at least ½ inch space at the top. Fasten the jar lid tightly. To make sure if it’s properly sealed, try to press the top lid. If the middle part doesn’t push in, you can be sure that you properly sealed it. Another thing is that if you want to extend the shelf life of your spicy green tomato relish, place the bottle into a hot water bath for another 6-8 minutes. Don’t forget to use oven mittens in handling the jar as it is hot. Let it cool down for 5-6 hours.
