If you want to make a healthy soup, you can use different kinds of vegetables. Carrots are usually added to dishes as well as soups. They are rich in Vitamin A, mineral antioxidants and dietary fiber. Carrot and lentil is a soup that you can make. Lentils are rich in protein, minerals, vitamin B1 and dietary fiber. Using carrots and lentils for cooking will not only make your menu delicious but also nutritious. To make your carrot and lentil soup even more appetizing, you can make it spicy. You can adjust the taste according to your preference. You can make it very hot or just slightly hot.
Here are the steps on how to make spicy carrot and lentil soup.
- Prepare the things that you will need. The things that you will need in making spicy carrot and lentil soup are hand blender, coriander, garlic, 8 pieces of carrots, oil, 1 piece of medium size onion, 1 piece of lemon (juiced), 1 ½ cup of lentils, vegetable stock and cumin. Cumin is the second most popular spice in the world after black pepper. This will give your soup its spicy taste. Use olive oil instead of the regular cooking oil to make your soup healthier.
- Cook the ingredients. Turn on the stove and set it to medium heat. Put the pan on top of the stove and add some olive oil. Let the oil heat. Once oil is hot, put chopped onion and wait for about 2 minutes. After that, put garlic then add coriander. To make your soup spicy, add cumin to the ingredients in the pan. Cook the ingredients until the onion turns brownish.
- Boil the ingredients. Once the onion turned brownish, you can now add the lentils then the carrots. Get your vegetable stock and add this to the ingredients on the pan. Put some water on the pan as well. The amount of water depends on how thick you want your soup to be. However, to make sure that you can make adjustments, do not add too much water. If the soup is too thick, you can then add more water to get the consistency that you prefer. If the soup is too thin, you will need to adjust all the ingredients. That’s why it’s better to start with adding small amount of water. Turn the stove to low heat and wait for about 20 minutes for the ingredients to simmer.
- Blend ingredients. After 20 minutes check the carrots if these are already soft. If they are still hard, continue cooking until the carrots turn soft. Once carrots are ready, remove the pan from the stove. Get your hand blender and use this to mix the ingredients on the pan. Once done, put the pan back on the stove. Add coriander and more cumin to make your soup flavorful. You can then add salt and pepper to taste as well as your lemon juice. Let it simmer.
